A Flavorful Feast: Cajun Sausages with Sauerkraut, Baked Butternut Squash, and Sautéed Zucchini

Today, I’m thrilled to share a recipe that came together on the fly but turned out to be an absolute winner. This dish combines spicy Cajun sausages, tangy sauerkraut, sweet baked butternut squash, and savory sautéed zucchini, creating a meal that’s both hearty and satisfying.

Inspiration Behind the Dish

As a gardener and cook, I often create meals using seasonal produce from our garden and staples from the pantry. Sometimes, I find inspiration from delicious finds at the store, like today’s Cajun sausages from Walmart. I was in the mood for something that would wake up my taste buds and remembered the sauerkraut in my cupboard. The idea of pairing it with sausages sounded perfect, and thus, this recipe was born!

Ingredients:

  • Cajun Sausages: Andouille Sausage (4-6)
  • Sauerkraut: Bubbies Sauerkraut (2 cups)
  • Apple Cider Vinegar: Bragg Organic Apple Cider Vinegar (1 tbsp)
  • Caraway Seeds: Caraway Seeds (1 tsp)
  • Butternut Squash: Organic Butternut Squash (1, halved)
  • Olive Oil: Extra Virgin Olive Oil (2 tbsp)
  • Salt and Pepper: Sea Salt and Black Pepper (to taste)
  • Large Zucchini: Fresh Zucchini (1, sliced
  • Garlic: Minced Garlic (1 clove, minced)
  • Lemon Juice: Organic Lemon Juice (1 tbsp)
  • Grated Parmesan Cheese: Grated Parmesan Cheese (2 tbsp)
  • Fresh Herbs: Fresh Parsley or Basil (chopped)
  • Honey: Raw Honey (for drizzling)
  • Brown Mustard: Spicy Brown Mustard (for serving)
  • Instructions:

    Cajun Sausages and Sauerkraut:

    1. Cook the Sausages: Begin by cooking the Cajun sausages until they’re nicely browned and cooked through. You can grill, pan-fry, or bake them to your preference. Andouille Sausage.

    2. Prepare the Sauerkraut: In a small saucepan, heat the sauerkraut with apple cider vinegar and caraway seeds, adding a lovely depth of flavor. Bubbies Sauerkraut and Bragg Organic Apple Cider Vinegar.

    Baked Butternut Squash:

    1. Preheat Your Oven: Set your oven to 400°F (200°C).

    2. Prep the Squash: Place the halved butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Organic Butternut Squash and Extra Virgin Olive Oil.

    3. Bake: Bake for 40-50 minutes, or until the squash is tender. For an optional touch of sweetness, drizzle with honey and sprinkle with cinnamon before serving. Raw Honey.

    Sautéed Zucchini:

    1. Heat the Skillet: In a skillet, heat a bit of olive oil over medium heat. Extra Virgin Olive Oil.

    2. Add Garlic: Add the minced garlic and sauté until fragrant. Minced Garlic.

    3. Cook the Zucchini: Toss in the sliced zucchini, add lemon juice, Parmesan cheese, and fresh herbs. Season with salt and pepper to taste. Fresh Zucchini, Organic Lemon Juice, Grated Parmesan Cheese, and Fresh Parsley or Basil.

    Assembly:

    1. Plate the Dish: Arrange the cooked sausages alongside a generous serving of sauerkraut. Add a portion of the baked butternut squash and finish with the garlic and herb zucchini.

    2. Drizzle with Honey: For a sweet touch, drizzle honey over the entire dish. Raw Honey.

    3. Serve with Mustard: Add a dollop of brown mustard to complement the kraut and sausage combo. Spicy Brown Mustard.

    4. Garnish: Garnish with chopped parsley or cilantro for a fresh finish. Fresh Parsley or Basil.
